Pimentos are mild flavored sweet peppers with a distinctive taste and shape. Ripe pimentos are bright red, sweet and crunchy. Plants are ornamental enough to use in the flower garden or in containers. Use pimentos fresh in salads and with dips, in Spanish omelets, and for pickling and relishes.
When and Where to Plant: Plant in full sun in fertile, well-drained soil amended with organic matter. Sow indoors 8 to 9 weeks before the last frost. Keep soil temperature in the mid-70’s. Set hardened transplants in the garden 2 weeks after last frost.
Care: Water deeply every week if rainfall isn’t adequate. Fertilize when first flowers form and eight weeks later.
Harvesting: Cut fruits every week when red but before they begin to soften. Harvest regularly so plant will continue producing.
