This delicious, cool weather vegetable is one of the hardest of all root crops. Plants are frequently grown with carrots, beets, and salsify. Their delicate, sweet rutty flavor compliments any meal. Prepare by parboiling or steaming, then pan-glaze or scallop.
When and Where to Plant: Soak seeds for 24 hours before planting to improve germination. Select sunny location with light porous soil, cultivate deeply and enrich with vegetable food and/or organic matter. In cold winter areas sow seed in the spring as soon as soil can be worked. Sow from mid-July to mid-September in mild winter areas. Firm soil over seed.
Care: Keep soil moist, weed free and feed every 4 weeks.
Harvesting: Flavor improves if allowed to develop in ground during fall and early winter. May be left in frozen ground indefinitely. Pull before tops flower.
