This flowery plant is often cultivated as a leafy green. It is packed with antioxidants and vitamins. When picked young it has a very similar flavor to regular spinach, but it becomes bitter as it matures.
When and Where to Plant: Spinach is a fast growing cool weather spring and fall crop. Select sunny location, cultivate, and fertilize with vegetable food. Plant in spring as soon as soil can be worked, repeating every 2 weeks until weather warms. Continue in late summer. Sow seed sparingly, firming soil over row.
Care: Thin first to 3 in. then to 6 in.. Use thinnings in salad.
Harvesting: Cut outer leaves when 6-8 in. long, leaving center to form new leaves.
